1 can (15oz) black beans, drained/rinsed
1 large red onion, chopped
2 large, firm, ripe tomatoes, chopped
10 oz. corn kernels
1 med. red pepper, cored, seeded and finely diced
½ tsp. salt
Dash of hot pepper flakes
1 tbsp. balsamic vinegar
¼ cup olive oil
salt and freshly ground pepper to taste
1 cup fresh basil, cut into strips
1 small jalapeno pepper finely diced (optional)
Combine all except basil in medium bowl and set aside for 1 hour.
